Beef
Torre Butcher’s only accepts premium young healthy animals. Why? Animals that are
naturally grazed pick up trace elements out of the earth (iron, zincs, etc) which
is good for their body and in turn yours. We also tend to lean towards the British
euro crosses, giving a better fat coverage and moister animal. We inspect the carcasses
at the abattoirs and hand-pick the premium carcases that suit us. We don’t accept
animals that are too fat, dark, lean, electrically stimulated or with a high ph
factor.
Our produce is served to you fresh. All our veal is naturally raised and solely
grazes with their mothers, which makes them genuine milk fed veal. Our new seasons
beef are fed on green pastures and partially fed by their mothers. Our grain fed
beef through the dry summer months are fed on lucern, meadow hay gristed grain.
We only select grain fed animals, raised the old fashioned way, aged the traditional
way. We don’t vacuum pack nor agitate our meat to speed up the aging process.
We are one of the very few butcher shops left that break-in our own carcasses, most
other butchers now have all their meat supplied to them from the abattoirs in boxes.
