Osso Buco literally meaning "hollow bones" uses cross cut shanks for a traditional Italian dish . Of course the bones are not hollow , containing deliciously flavoured bone marrow that melts when braised.

Perfect with risotto alla milanese , served with saffron & a gremolata garnish. Mash potato is pretty good too!!
