Torre's Guide to the Perfect Christmas Roast

 

Ham Leg

Instructions

Start by preheating your oven to 180 Celsius fan-forced.

Our Hams will be prepared for glazing or if purchased unprepared, you will need to peel the skin and score the fat.

Hams can be eaten without being glazed, but glazing and decoration is preferable.

With a tub of glaze provided, please use about 1/2 of the container and apply to the fat of the Ham only.

Place the ham in a baking dish lined with baking paper into the preheated oven, and roast for 45 minutes.

It is optional to use the remainder of the Ham glaze to baste the fat throughout the cooking process, or apply the remaining 1/2 once it has finished in the oven.

Be vigilant when roasting the Ham, to ensure the sugar does not burn during the caramelisation process and roast to until golden.

Porchetta

Instructions 

Porchetta is a show-stopping centrepiece for any Christmas table. Our Porchetta Pork loin comes pre-flavoured with fennel seeds and fresh herbs, all rolled and tied.

To cook, dry the Porchetta, especially the skin, and evenly rub extra virgin olive oil over the roll. After, generously apply fine cooking salt to the entire roll's skin.

Preheat the oven to 200 Celsius fan-forced

Place the Porchetta onto a rack, uncovered, and roast in the oven for 1 hour.

After an hour, reduce the temperature to 160 Celsius fan-forced, and proceed to roast for 2 hours, still uncovered.

After the two hours, remove the Porchetta, and let it rest on your bench uncovered for a minimum of 1 hour before serving.

It is lovely served warm, room temperature or cold.

Turducken

Instructions

For a truly unique Christmas roast, try your hand at a Turducken. This delicious dish consists of Turkey, Chicken and Duck, and contains traditional stuffing.

Make sure, prior to cooking, the whole bird is marinated liberally in olive oil and butter.

To cook, simply preheat your oven to 160 Celsius fan-forced, and roast for 2 hours in a baking dish.

Once the two hours has elapsed, take the Turducken out of the oven, and leave it on the bench uncovered for 1 hour. 

While resting, baste the bird with the oil and butter that is leftover in the baking dish, every 5-10 minutes.

Whole Turkey

Instructions

A classic Christmas roast, the whole Turkey is a crowd-pleaser. 

Roast it with plenty of butter and herbs, basting regularly for a golden, crispy skin.

Preheat your oven to 170/180 Celcius fan-forced and roast for the below time frames depending on Turkey size. These time frames allow for an optimal 35 minutes of cooking time per kg of Turkey:

4kg - x35 mins = 140 minutes (2.3 hours)

6kg - x35 mins = 210 minutes (3.5 hours)

8kg - x35 mins = 280 minutes (4.6 hours)

10kg - x35 mins = 350 minutes (5.8 hours)

It is crucial to rest your Turkey for at least an hour before carving, continuously basting the bird in the extra butter and oil remaining in the pan, as the temperature continues to rise. 

Place the bird in a warm place, tented with foil. The Turkey will not get cold, but will become juicier and much easier to carve.

Whole Duck

Instructions

For a smaller gathering, a whole Duck makes a delicious and elegant Christmas roast.

Preheat your oven to 190 degrees Celsius fan-forced and score the Duck skin, patting the skin dry before seasoning it well with salt for a crispy skin. 

Roast the Duck on a rack in a roasting tray at 190 degrees Celsius for 1 hour and 20 minutes and until the skin is crispy. The tray will collect any reduced fat which is excellent for roasting complimentary vegetables.

Ensure the Duck is rested for 20 minutes before portioning. Serve with a tangy orange sauce for a festive touch. 

Whole Chicken

Instructions

If you're looking for a simpler option, a whole Chicken is a great choice for a Christmas roast.

Make sure, prior to cooking, the whole rolled bird is marinated liberally in olive oil and butter.

To cook, simply preheat your oven to 160 Celsius fan-forced, and roast for 1 hour and 45 minutes in a baking dish.

Once the cooking process is done, take the Chicken out of the oven, and leave it on the bench uncovered for 1 hour. 

While resting, baste the bird with the oil and butter that is leftover in the baking dish, every 5-10 minutes.

The left over juice in the pan is excellent for drizzling over slices when serving.

Beef Fillet

Instructions

Treat your guests to a luxurious Beef Fillet this Christmas. Sear the Fillet on all sides to lock in the juices, before roasting. 

Preheat your oven to 180 degrees Celsius fan-forced and roast for 25-30 minutes. The Fillet should then be rested for an hour whilst continuously basting with remaining juices.

The basting adds extra flavour and moisture to the Fillet whilst the juices are redistributed when resting. 

Once rested slice thinly and serve with a rich gravy for a delicious Christmas feed.

Gammon

Instructions

Gammon is a festive favourite that's easy to prepare and perfect to share.

Boil the Gammon in a water filled pan at a simmer for 90 minutes to remove excess salt and cook from the inside.

Preheat your oven to 160 degrees Celsius fan-forced.

Following boiling, drain the remaining liquid and roast the Gammon covered in foil for 90 minutes until it is caramalised.

Remove the foil 30 minutes prior to the end of cooking time to allow the fat and skin to crisp up. 

We suggest scoring and adding a sticky glaze at this point, complimenting and enhancing the delicious flavour of the Gammon with our house-made Torre Glaze.

Rest the Gammon for 15-20 minutes before serving adding additional glaze as desired.

Serve hot or cold for a versatile Christmas roast option set to delight. 

Lamb Leg

Instructions

For a sophisticated Christmas roast, a Lamb Leg is sure to impress.

Preheat your oven to 170 degrees Celsius fan-forced. 

Season the Lamb with garlic, rosemary, and olive oil, then roast it at 170 degrees Celsius for 2.5 to 3 hours or until it is beautifully pink in the middle.

Let it rest for around 15-20 minutes before slicing, and serve with mint sauce for additonal flavour. 

Turkey Breast Boned And Rolled

Once the cooking process is done, take the Turkey Breast Roll out of the oven, and leave it on the bench uncovered for 1 hour. 

While resting, baste the bird with the oil and butter that is leftover in the baking dish, every 5-10 minutes.
